Origin

Gyoza has its roots in Chinese jiaozi, but Japan made it its own. Brought over in the early 20th century, gyoza quickly became a beloved staple in Japanese homes and ramen shops alike. While the Chinese version is often boiled or steamed, Japanese gyoza are typically pan-fried, giving them that signature crispy bottom and tender top.

In Japan, they’re often served as a side dish to ramen or enjoyed on their own with a tangy dipping sauce made from soy sauce, vinegar, and chili oil. At Kozan Ramen, our gyoza blend Japanese technique with bold house flavors, making them the perfect bite to pair with any bowl — or to steal the show on their own.
