Shoyu Ramen

醤油ラーメン

Shoyu ramen (醤油ラーメン) is one of the most classic and beloved styles of Japanese ramen, defined by its soy sauce–based tare (seasoning) that gives the broth its signature savory, slightly tangy depth.

Origin

Shoyu ramen originated in Tokyo, making it one of the earliest ramen styles in Japan. It's widely considered the "default" ramen in many parts of the country.

Flavor Profile:

  • Lighter than tonkotsu but still deeply satisfying

  • Balanced, with a savory-soy richness and aromatic broth

  • Often the most approachable ramen for newcomers
