Tonkotsu ramen (豚骨ラーメン) is a rich, creamy, and flavorful style of Japanese ramen made from pork bones (ton = pork, kotsu = bone) that are simmered for 12–18+ hours, until the collagen and marrow break down into a luscious, milky broth.

Origin
Tonkotsu originated in Fukuoka (Hakata) on the southern island of Kyushu, Japan. It was created as a quick and hearty meal for laborers, and became beloved for its deep flavor and soul-warming comfort.
